Making Marinade sauce, mix all ingredients and add salt and pepper, shake it well.

Using large syringe(best of all) prick the duck all over with the prepared marinade as you make injections.

Marinade that remained put into plastic bag and put the duck inside, closes it well and keep for about 24hours in the refrigerator.

Apples and plums (or other fruits you might get) put into a deep frying pan and caramelise adding sugar.

Take out the duck from marinade and fill it with caramelised fruits, stitch the belly.

Now we put our duck into ceramic or glass form and cover with a silver foil. It is going to the oven preheated for 90-100C for 3hours. While baking, don't forget to pour the duck from time to time with the juice that will segregate. After 3hours remove the foil and crisp on 180C (about 10min).
