Just simply marinated in brine(salt water) overnight,sprinkled with fennel salt and roasted,but used a new trick I learned and the crackling(pork skin) came out super crispy.Served with roasted potatoes and sauté spinach.
It was crispier than I ever expected,like Cantonese roast pork,but made in my oven! No need for coating,just many steps,I think most essential is pouring hot water on the skin and sit for one hr before roasting,I am very happy with this!
