process the peeled shrimp, fish fillet, egg white and tapioca flour in the food process until it becomes a solid batter, season it with salt and peper.
mould the mixture into balls and boil it until nice and firm. if the shrimp balls are floating, it indicates the shrimp balls are cooked

soup:
boil the shrimp skin, fish bone, carrot, celery and onion.
once it is boiled bring it to simmer for another 45 minutes, and once in a while you can do the skimming to allow the broth to clear.
season it with salt and pepper

put the shrimp balls and the soup in a bowl and you can serve it on its own, or you can serve with soy sauce if you want it a bit more salty.
