Slice the ginger very thin. In a cooking pan place the garlic covered with cold water, and bring to a boil. Discard the water, and repeat this process two more times. Then cover the garlic with 2 cm of water, add ginger and the sugar. In a medium heat cook the garlic until they are caramelised.

To finish add half cup of water, and let the water be reduced and with the help of a fork smash the garlic. While the jam is boiling away sterilize your jar. When the jars are sterilized and the jam is cooked, remember you must add hot jam to the hot jars.
