Persian "Oliviyeh Sandwich" ساندويچ الويه

"Olviyeh" has been one of my favourite sandwich fillings since I was a child and like many other dishes each family has their own version of the recipe for it.

This is a more simplified version as I can't get my hands on all the ingredients here. 😔

It is very similar to potato salad but the Persian version has many more ingredients in the recipe!
I also understand that there is a dish very similar to this in Russia so we might have copied this one off them! LoL 😆

All the raw ingredients should be boiled and thoroughly cooked before mixing...

Dice carrots, eggs, chicken and gherkins finely and add them to your mashed potatoes. Gherkins can be replaced with thinly sliced salted cucumbers and green peas and corn can be added too!

Add mayonnaise and season with salt pepper and a few drops of lemon juice to your own taste.
Mix well and let it sit and cool down in the fridge for a few hours.

In Iran we serve this as a sandwich filler, even with baguettes or as a side dish.
