In a bowl, add the cheese, eggs, salt, sugar, baking powder and the vanilla essence. Mix them well, after add flour and mix it again until it becomes a compact dough.

Knead the dough until all the flour is incorporated; this dough will be sticky. After kneading, let the dough rest for 10min to double its volume and after that, divide the dough and start to form the papanasi.

The papanasi form will be 1 circle and 1 small ball. After forming, put in a pan the oil and start to fry all the papanasi.

After finishing the frying, you can start to decorate the papanasi by putting on the top of it sour cream and jam.
