Crumble the cheese; add the egg yolks and mix well till incorporated. Add the remaining ingredients gradually. The dough should be a bit thicker than the one for pancakes. Leave to rest for 30min. in the refrigerator.

Meanwhile, beat the egg whites till makes snow. After half an hour, beat in the egg whites, grease the baking pan with lard and bake in the preheated oven on 220C for about 20min,till it turns golden brown on the surface.

When ready, take out of the oven, spray with water and cover with kitchen towel to cool. Serve after 10min.
