How to make Sushi rice

【cook rice in a rice cooker】
Wash and rinse rice, and cook it with less water than normal cooking.
Soak the rice for 30 minutes before cook.

【Prepare sushi rice】
When the rice was cooked, leave it without opening the cooker for 15 minutes.
Transfer the cooked rice to the large bowl.

Pour the sushi-vinegar generally and slowly on the rice. Stir it well using a spatula in a gentle motion from the bottom of the bowl.

(Fan it with a paper fan so that the rice would cool faster.)

Cover it with a clean, damp paper towel, until the sumeshi cool down.

※In japan measure cup is 200ml. but measure cup for rice is 180ml.※

The amount of water is 1.2 times of unwashed-rice. when you cook 1 cup of rice, add 200ml water.
When you make Sumeshi, add less water than usual. when you cook 1 cup of rice(for sushi), add 180ml water.

《INGREDIENTS》
【sushi-vinegar(for 2cups cooked rice)】
5tbsp Vinegar(rice Vinegar)
2tbsp Sugar
1/2tsp Salt

Add vinegar, sugar and salt in a bowl and mix until all mixed properly.
