To: Elanez it's tofu and it is scooped right away after its been curdled rather than applying more pressure or releasing it in water.

To: Elanez it's called 'oboro tofu'. You might be able to find it in a Japanese restaurant and it looks like a restaurant called 'Shintaro' at the four seasons hotel had it on their menu. Not sure if they still have it.
