Tradition Beijingese dish.糟 is 酒糟,similar to 酒粕,but from a glutinous rice wine.Also use white vinegar in this.I ate too much last week and wanted something lighter.
It's full of rice wine flavour,and leans toward the sour side,actually quite refreshing to have!Compare to some northern Chinese dish,this might not be most popular,but I am sure some restaurants that specialize in Northern Chinese cuisine will have this,I'll look out for it and let you know,thanks
日本前一段也很流行糟的料理。名称塩麹、一般都来沾上后煎或烤魚,肉,可惜街上只有白糟,没卖红糟(^O^)
流行一过,最近大家又少用了(笑)
