Place sausage meat in a large bowl. Add the sage, pepper and mix until well combined. Cut a pastry sheet down the middle to make 2 rectangles. Split the sausage meat into equal size ball.

Using floured hands form the sausage meat into a sausage shape and place in center of pastry rectangle. Using a pastry brush put beaten egg on the edges of the pastry. Fold the pastry edges together to create the sausage roll. Crimp the edges with the prongs of a fork.

Place on baking paper on an oven tray. Use a sharp knife to cut small vents in the pastry to allow steam to escape. Apply an egg wash to the top of the sausage roll. Bake in the oven at 200C for 20-25 minutes until golden and risen. Remove from oven and cool on a wire rick before serving warm or cold.
