Roughly chop 3 tomatoes in chunks, the other 2 slice it into 5mm cubes. Finely chop the onion and garlic

Open the ciabattas and pull all the crumb and separate it. The crust just rip in to pieces and add a little olive oil and put it into the oven to get crispy.

In a casserole with some olive oil add the onions, garlic and roughly chopped tomatoes and cook until the tomatoes go soft. (Don't add any water!)

When it gets soft add the crumbs, the tomato cubes and 2 cups of water or vegetable stock. Cook low and slow until the bread crumbs disappear.

Season with salt and pepper and serve with a side of ciabatta croutons (the crust)
