I cooked sliced green apples and de-seeded guavas in butter ,sugar and Cinnamon till half cooked...then let cool.
for the top I crumbled up superwine biscuits and mix that with butter and brown sugar.
for the deep fried ice cream, scoop some ice cream into balls and let freeze solid for a hour or so..flour,egg wash, fine breads crumbs then deep fry for 10 secs.
blitz Strawberry's into puree, strain through sieve then add lemon and sugar..mix till dissolved.
Line a cake dish or pan with some sweet short crust pastry...fill with the cooked apple & guava mixture..top with crumble and put in a pre- heated oven at 170° for 45 minutes or until the crumble is golden.
