It all started with a red cabbage sitting at home,I made a sauerkraut,then a few days later,I paired it with grilled beef tongue and grain mustard mayo,and all go in my homebaked rye bread.
Thank you! It's the first time I made with red cabbage too!The taste is not much different,but the colour is more striking!The sourness is very natural,comes from the fermentation,I love it with fatty meat or sausage!

It's the first time I used red cabbage to make sauerkraut,I find it very similar with the green type.It's really simple,shred the cabbage,mix salt,put something on top to press it down,the cabbage will ferment in it's own juice,I left it in room temperature in three days,longer will be more sour. It's not like marinade in vinegar.On itself if it's peculiar to you,you might find it better if it's eaten with other things,especially in a sandwich with meat,or in a hot dog. When I made this,I had in mind I want something like with a Reuben sandwich,I skip the cheese and used tongue instead of corn beef. The rye bread I made has 35% of rye and 10% of whole wheat flour.I tried to cut the slits so that it looks like a flower,but obviously not very successful,may be you should try too,your bread will be more suitable!
