I haven't made fresh pasta for a long time,but seeing both Mr.Y氏 and Mr Hayabusa San's fresh pasta,made me want to dig out my pasta machine and made some for myself,and so glad I did!With fresh pasta,I love to make a simple sauce and let the pasta itself shines.The truffle is not expensive stuff,jus
just truffle paste comes in a bottle,but good enough for me!

I am afraid this is not bigoli,although I like it very much,this is just made with an ordinary pasta machine comes with different sizes of cutters,my pasta comes out squarish,but not exactly,may be I should get a proper one.However,I think Mr,Y氏 should get one of those metal dies and the press for b

I'm great honored that you named me with ひろさん because he has a great sense and very gentle like you.

I recommend you to get chitarra rather better than metal dies. Metal dies need hand power it means not Mr.マリック but simply
simply grasping power. Chitarra is easier and useful. I think it's not so expensive.

from scratch, it's really not that difficult as well , I am sure you could handle it!I think with lots of Italian dishes,simple is best and let the ingredients speak.I love fresh truffle too,but the bottle ones aren't bad at all!

Thanks so much,I haven't done the fresh noodle for a long time,but seeing Mr.Y氏and ひろさん's makes me want to do again,but still got room for improvement,it's a special skill and I'll work on it.There is just something very satisfying about making pasta from scratch.Please have a nice weekend too!
