This is 青衣fish in Chinese, parrot fish in English,ヒブダイ in Japanese,I think....this is fresh,found this in market.
Chanterelle is 杏茸,I think,mine is dried,again I bought this in Yunnan,China.
Moving on to more summerly ingredients now,first sweet corn dish of the year.
