I was wandering how I cooked 秋刀魚, I wanted to cook it 和風 but cannot decide with vinegar or 梅. But I made up my mind at the moment when I looked at your dish of 秋刀魚とゴボウ with balsamic vinegar. I was quite sure that they would be great match!
And it sure was. Since I cooked them with a pressure cooker, we could eat bones of 秋刀魚. To my surprise, burdock cooked with balsamic vinegar was so tasty. You inspired me a lot! Thank you!!

Actually no secret that fatty fishes pair well with vinegar,and for me balsamic is one of the tastiest on earth,I also cooked gobo in balsamic before,so I knew this dish is going to work! I sauté my sanma for that extra aroma,but I am no good with small bones,in fact my favorite ways eating sanma are sashimi,or cooked with pressure cooker,so your dish is ideal for me! I liked sanma with balsamic very much!! As you say, fatty fishes go well with vinegar! I always cook fish with ginger but burdock was great, too.😆😆 I want to try your sautéed sanma w/balsamic next time!
