Add 1 teaspoon salt, 1 teaspoon sweet paprika and 1/2 teaspoon garlic powder. Then cover with 2 tablespoons of olive oil.

Rub chicken with 1/3 cup of tomato paste. Bake on 420 Fahrenheit for 1 1/2 hours turning the chicken over in the middle of baking.

Now for arugula salad: Place baby arugula with tomatoes in a mixing bowl (note that arugula is spicy herb therefore for less spice you can use any other salad mix).

For the dressing: 2 tablespoons olive oil, 1 teaspoons balsamic vinegar, 1/2 teaspoon salt. Mix well. Drizzle the dressing over arugula salad and mix.
