Aubergine, tomato and mozzarella salad

レシピ
材料・調味料 (1 人分)
Aubergine
8 slices
Cherry/plum tomatoes
6 tomatoes sliced
Mozzarella cheese
1/4 ball of mozzarella
Olive oil
As needed
Lemon juice
1 tablespoon
Chilli flakes
To taste
Salt and pepper
To taste
Pizza express house dressing
A drizzle
Mint sauce
2 teaspoons
Garlic
One clove
作り方

Heat olive oil in a frying pan

Slice aubergine into thin strips and add to the pan counting them in the oil

Sprinkle on some salt, pepper and chilli flakes

Slice tomatoes into slices and add them to the pan

Crush garlic, cut into small pieces and add to the pan

Turn over the aubergine slices. They should be golden brown and soft

Splash in some lemon juice

Once the aubergine is done put everything into a plate

Tear up some mozzarella and place on top of the aubergine slices

Drizzle over dressing and dot with mint sauce

Eat while hot, using a slice of bread to mop up the juices afterwards
