Ingredients 400 grams chicken 200 grams potatoes 50 grams large onions 39 grams lotus seed 20 grams shallots fried 1tablespoon turmeric power 1/2 cup Massamas curry paste 4 tablespoons palm sugar 4 tablespoons palm sugar 4 tablespoon fish sauce 2 tablespoons tamarind sauce 4 cup coconut cream

1. Chop beef into 2 inch cubes. Braise the meat in water until tender [ approx 1 1/2-2 hrs] Set aside

2. Peel and cut the potatoes into cubes similar in size to the meat.Peel and quarter the onions.

3. Heat one cup coconut cream till it separates. Fry the curry pate until fragrant and then add the turmeric . Stir over a medium to low heat taking care the paste does not burn

4. Add the onions,potatoes and lotus seeds and fry.Add the remaining coconut cream .Stir until the liquid bubbles.Season with fish sauce ,sugar and tamarind sauce .Then add the boiled chicken to the curry and simmer until the potatoes are cooked Sprinkle with fried shallots and serve. •
