Prepare the spinach by boiling water with a pinch of salt; when the water is boiled add the fresh spinach and just let it there for 1 min then after take out the spinach from the water and transfer it to a bowl with ice water;

after cooling down the spinach, take out from the cold water and let it drain it.

In a frying pan, heat the oil and butter then add the chopped onion and garlic.

After frying the vegetables, add 500ml of hot water then add the potatoes.

When the potatoes are boiled then add the spinach and boil for 5min more.

After boiling, blend the soup until you obtain a creamy soup.
