Make a sugar syrup by melting a spoonful of sugar, medium heat, until the sugar caramelizes and gets a dark brown shade. Pour over sugar 125ml of boiling water and wait a few seconds to melt the sugar.

Add the spices, the rest of the sugar and stir until the sugar is melted. Put 150g of flour in the hot syrup and mix well; let it cool down. Preheat the oven at 160C for 10min.

In a bowl, mix the rest of 330g flour with salt and baking powder, baking soda and put over the cool composition, add the egg, butter and mix. Divide the dough into pieces and form them into balls.

Bake them at 160C for 30-40min. Make the icing by mixing a egg white, sugar, hot water.

When the ginger bread is baked, let it cool down and after put the icing on the top of them and let it cool down.
