Hi Makiko San,I learned new word today,I never knew パクチー,I found out it's same as 香菜 or コリアンダー in Japanese...You might know it's my one of my favorite herb,I put it on everything!It's essential in a pho.In Vietnam,they also put many other herbs too,like perilla,Vietnamese mint,sawtooth coriander etc,they put them on the table and everyone help themselves with them,I love to eat pho that way!Sadly In HK they are not very generous with them,I wish I could grow them.May be you could try. Your pho looks delicious,nice clear broth.I didn't know you could get this kind of flat rice noodle in Japan,are they dried?

日本で手に入るのは乾燥のフォーだよ。茹でて、少し水で洗ってからスープに盛りつけます。
パクチーとコリアンダー、香草は同じものだと思うんだけど、どの表現をするかいつも迷います。中華料理なら香草で良いけど、コリアンダーとパクチーをどのように使い分けるか…(笑)
種やスパイスになったものはコリアンダー、フレッシュハーブの状態はパクチーというのがぴったりな気がしています。
