It’s probably hard to find freshly made udon noodles here. So hard that I would need to make a special deal with a restaurant or someone professional.
I made my udon by using a stand mixer for the kneading portion. The dough was very thick and dry, so it’s difficult to knead by hand. (I hear traditionally, udon is actually kneaded with feet)

Yes! Step on with feet and knead with hands. It's very tiring😵But the texture becomes chewy 👍

My hometown is Kagawa Pref. and “Sanuki udon” is a specialty.
It’s sooo fantastic！

I have ever been to Kagawa. I remember I had amazingly delicious udon at Gamou udon shop in sakaide. That’s unforgettable experience. I think I want to go to kagawa someday again.
