Country Potato Soup ver. 2

材料・調味料 (4 人分)
Peeled red potatoes
5 1/2 cups
1 large Carrot
2 stalks celery
1 tablespoon canola oil
1 onion chopped
Vegetable broth
2 cups
Almond or soy milk
2 cups
whole wheat flour
2 tbsp
Smoke Tempeh (crumbled)
7 slices
Salt&crackpepper
1/2 tsp

Peel and cube potatoes, peel and slice carrots including celery (slice), put into large pot of boiling water covering vegetables. Cook until potatoes are fork tender. Drain vegetables in colander.

In same pot add oil cook onions until tender about 3 min on medium heat. Add broth and drained vegetables, mixing well.

Put the Almond or Soy milk in bowel whisking in flour until combined. Pour into soup pot. Increase heat and continue to mix until it comes to a boil and then set to low heat making sure to stir mixture until thickens adding bacon and salt and pepper.

Crack pepper is best for this recipe and I prefer course sea salt.

Note: any store bought vegan bacon will work, however for this recipe My preference is smoke tempeh bacon fully cooked in little oil. It will slightly crisp up.

Precooked vegan ingredients like bacon is delicious if you know which brands to buy. My favorite bacon is two brands:
Sweet Earth natural foods, Hickory & sage. Lightlife Foods organic smoke tempeh strips.

You can take chipped coconut and deep fry creating a crispy bacon.

This creamy soup is taken from my favorite vegan chef, Bianca Phillips, her cookbook Cookin Crunk (eatin vegan in the Dirty South.)

Hey, it's like 80 degrees "HOT!" and yes, eating hardy creamy soup most others would serve in cold winters. But!, I got that dirty south Smoke Bacon Tempeh taste with soft red potatoes and I immediately knew the recipe.

Do KNOW with attitude eating Vegan is eating full flavored delicious healthy. In fact being vegan push us plant choppers to seek out ingredients from around the world. Most vegans I know pantry isn't region based, we're seeking multicultural essence. Never ever believe vegan is bland or unhealthy, in fact our protein is generally higher daily than meat chewers. This recipe will cause your lips to smack and tongue begging for more.
I'll have to check out that cookbook.
