This is a healthier version of the Persian cutlets which my grandmother was brilliant at making and its taste has filled my childhood memories.
This version is made from a mix of mashed beans (red-beans & chickpeas), mashed potato, finely grated onion, egg and minced beef seasoned with salt, pepper, turmeric and cinnamon to taste and finally shallow fried to perfection! YUM~
The salad is called "Shirazi Salad" سالاد شيرازى in Persian and is a mix of finely cubed/diced raw onion, tomatoes and cucumber garnished with some fresh or dried mint, salt & pepper to taste and some lemon juice and olive oil.
