Saw people making this dish,I mainly wanted to try squid ink aioli,something that I never had before....
Lotus root chip not only looks pretty,but also add flavor and texture to the dish!
I've never eaten squid ink aioli!
It's new wave to sauce of tartar.

I think it's interesting too,let me describe how it tastes,like squid and aioli together...😁,but it's a good sauce to go with seafood!
The idea comes from a photo of this dish,a 90%copy really,love the idea...
Thx,I have no problem with that,I use other people ideas and I admit.
