Oranges with Meringue Topping

Saltanas
2 tbsp
Blood Orange, Mango, Guava Balsamic Vinegar (YIAH)
1 tbsp
Pumpkin Pie Spice (YIAH)
1 tsp
Egg whites

Castor Sugar
2 tbsp
Rose Flavoured Sugar

Cut top off oranges and scoop out insides. Cut orange pulp into small chunks and mix in saltanas, balsamic vinegar, spice and set aside to marinate.

Cut oranges to decorate.

Make meringue by beating 3 egg whites till peaks form and slowly add sugars while still beating.

Fill oranges with fruit mixture and pipe meringue on top.

Bake at 230°C for a couple of minutes/till browned.
