Beef tripe

Beef bones wz marrow

Small Carrot

Vinegar

Salt/Pepper

Before cooking the soup, wash the tripe in warm water and 50ml vinegar.

Boil the tripe together with beef bones (knee), carrot and onion around 3-4hours at low fire (or until tripe is boiled); when the vegetables are boiled take them out first and blend them.

After boiling, take out the bones and tripe; take out the marrow from bones and after we throw bones.

Cut the tripe in small stripes and put it back in the same water that boiled before and start to boil again the soup and add 1tbsp vinegar, 1tsp salt and pepper.

In a bowl, mix yolks, flour and fresh cream until its pale colour. Add little by little some hot soup from the pot, yolk mixture should be at same temperature as the soup and then add everything inside the soup. Mix well.

Add blended vegetable and let the soup boil for 10min.
ポイント

Garlic paste: Peel the 1head of garlic, blend it with a pinch of salt and 50ml of oil little by little. Mix and after add water for making the mixture more thin and mix well until it becomes a paste.
