Chicken wing confit with kimchi aioli

Didn't want to waste the oil I made the chicken leg confit,so I confit some chicken wings in it too.Kimchi aioli made with Napa cabbage kimchi,eggs,oil etc blended together,kimchi becomes a paste,great for dipping!

wow! what a amazing performed dish here!! it sounds Korean sauce but its taste images like Oriental one. how do you inspire such a sauce?

Yep,trying a more modern approach smearing the sauce on the side of the plate.Kimchi aioli itself sounds kind of modern too,but not Chinese,more like a western thing that western people do now.
I could have made the sauce a little smoother,but I didn't want to be too fussy,so I just blend it with hand blender....

Thanks,you are too kind,I thought I shouldn't be too proud with this,I could make the sauce smoother with the right equipment,but I didn't want to be too fussy.
The sauce is good though,an east and west mix,I got the idea from kimchi purée some western chefs do,I just took it further to make it richer...
