Salmon rillette / サーモンリエット

This is money saving cuisine for me.Have to think of something to go with my home baked bread,instead of buying expensive cut of salmon,I got the leftover salmon bones from a place that sells sashimi,at a very low price,I just have to steam the fish and pick over the bones,I was so surprised the amo

amount of flesh I got from it.May be it was something that was designed to use up the leftover in the first place.

That looks really meaty. That does not look like made by leftover. When I made salmon rillettes, I put too much mush potatoes and became dried out texture. Yours look smooth and great.

Thanks,I am glad you like this!There were so much flesh between those bones,I had to make an extra jar!I didn't use potato this time,just salmon,smoked salmon,butter,egg yolk,dill,Pernod..etc,please try this too,it's very tasty!

I really did enjoy this rillette,I spend a few nights finishing all these,and still didn't get tired of it.I am a believer of utilizing food,and these flesh near the bones is full of flavour!Thank you so much for acknowledging me,you are a real friend!And about the bread,I am happy with the flavour,

but I just wish I could make more big holes in it,I could get them in baguette,but not in country style bread,I even try a 80% hydration and still not good enough.Anyway,no worry,I'll keep on trying!
