Preheat oven to 350°F. In a nonstick skillet over med high heat, cook the sausage until browned and crumbled. Remove to paper towel to drain off grease and cool.

In a med bowl, mix the cooled sausage with the cream cheese and cheddar until well combined. Set aside.

Cut the stem end off each pepper. Cut each in half lengthwise and remove the seeds and veins with a spoon.

With your fingers or spoon, fill each pepper half with the sausage-cheese mix and set on a greased baking sheet.

Bake for 10-12 minutes or until cheese is melted and peppers are soft.

If you can find bilk Italian sausage, use the Kind in the casing. Just remove it from the casing and crumble it.
