バナナクルミケーキ• banana walnut cake

- slice half a banana and set aside for topping later
- 1
- mash the rest of banana in a bowl together with some honey & lemon juice
- 2
- add the eggs & sugar in a mixing bowl and mix lightly (i used an electric mixer on low)

- add in milk & oil & continue mixing

- add in mashed banana & a handful of chopped walnuts & continue mixing
- 5
- sieve flour in a big mixing bowl
- 6
- add in mixture to flour & fold in using a spatula, do not overmix
- 7
- line a loaf tin with some butter & pour mixture in, drop it a few times to release air bubbles & smooth out the surface

- add the banana sliced earlier & some unchopped walnuts on top
- 9
- bake in oven at 180 degrees for 35-40 minutes, check periodically for any signs of burning (walnuts) & lower heat if necessary
- 10
- once done, remove cake onto chopping board/plate, dust with icing sugar & it's ready to serve!
