Lemon and thyme roasted chicken legs

Whole chicken legs

Turn on oven to 220 C.

Cut potato and carrot in 1 1/2 inch cubes. Cut tomato in half. Cut onion into 6 wedges.

Line 7-inch square roasting tray with parchment paper. Pour oil in it and spread around. Lay cut vegetables in the tray and mix in half the salt, pepper and thyme with the vegetables. Squeeze lemon juice over, about half.

Stuff garlic butter under the skin of chicken legs. Cut lemon into 3 or 4 slices. Place 1 slice of lemon between the skin and flesh of each chicken leg. The other 2 slices, add to the tray. Rub the chicken leg with the remaining salt, pepper and thyme. Place them on top of the vegetables.

Place tray into oven and roast for 40 mins. Serve.
ポイント

You can add other chicken parts to roast together as I did by adding the 2 wings. Adjust the seasoning accordingly.
