fancy thick balsamic vinegar

Chop onions into small/medium chunks.

Sweat out onions over low heat in copper skillet with desired amount of butter or ghee. Add salt when soft and smash a bit with wooden spoon.

In an other skillet, cook eggs in butter or ghee which ever method you like best.

Put soft onions and eggs on a plate and drizzle with the best balsamic vinegar you can find.
