Wash rice and place on rice cooker. Pour 2 cups of water into cooker. Pour soy sauce and fish sauce into same cup and top up with water until filled up. Pour liquid into cooker. All in 3 cups of liquid for this step.

Add dark soy sauce, grated ginger and garlic, roots of spring onion, homemade chicken powder, Chinese cooking wine, sesame oil, salt and pepper into cooker. Mix well. Turn on cooker to cook rice.

When rice is half cooked, add lotus root, chicken and mushroom. Mix slightly. Continue cooking and let it steam for another 20-30mins after cooker had stopped cooking.
