Laxmi Basmati Rice
7 Cups
Whole Lamb
15 pounds
Lamb Stock
16 Cups
salt

Cut half of the whole lamb into 5 parts

Wash them then dry with paper towels.

season meat with salt (Massage)

On covered Turkey pan with a foil, add one cup of Rice, then replace the rack on top of the rice to put the lamb to be on the top of the rice.

Cover the whole pan with heavy foil perfectly.

Put the pan in the Oven 500° for 3 hours

Uncover the top of pan and turn the broil until the lamb becomes golden brown.

For rice cooking:

Boil lamb meat and fat with bone for two hours on medium heat.

Add salt then wash the rice then cook it with the lamb stock and cover it under High heat for one minute.

Reduce the heat to low Medium and keep the rice cook for 20-30 until absorbe all stock, then turn off the heat and keep it covered for 10 minutes.

uncover the rice, mix it with the cooked rice under lamb then scoop the rice into a large serving tray.

Add the roasted lamb on top of rice
