Cook spaghetti to al dente in salted boiling water.

Pan fry salmon until half cooked. Flake slightly with fork. Put aside.

Put butter, shallots, some oil in pan and stir fry until shallots are soft/slightly brown.

Add mashed Avocado and stir for 15 seconds, then pour milk and parmesan cheese into pan. Season with salt and black pepper.

When mixture has simmered for about 30 seconds, pour in cooked spaghetti. Stir around until the noodles soak up most of the sauce. Note that the sauce should not be runny at this point and there is not much sauce left at the bottom of pan.

Then stir in flaked salmon and coriander. When salmon is just cooked, dish up and serve . Please do not overcook the salmon.
