Prep a skillet over medium-high heat with the olive oil. Season the chicken with salt and pepper and cook about 6 to 8 minutes per side or until just about done

Place the mozzarella over the chicken, then add the grape tomatoes and basil

reduce heat to low and then cover and simmer for about 5 minutes or until tomatoes begin to soften and mozzarella begins to melt

Remove from heat and plate chicken, then spoon tomato basil mix over chicken

Serve with Parmesan Risotto over a bantamweight dinner for two and enjoy :-)
