Take your duck and coat it with salt, pepper and herbs and oil then place it into a vacuum seal bag, make sure you take all the air out this can be done by slowly putting your duck pack in some water with the top open so that the air will escape.

Next have a large pan or bucket, anything that will hold water and place your sous vide machine in to the water and set it at 62degrees once it has reached 62degrees place your duck bag into the water set the time for 1 and a 1/2 hours.

After 1 & a 1/2 hours take your bag out and pat dry in a frying pan add some oil over a medium heat and seal the out side of the duck roast this will give it some colour, don’t overcook it as your nice pink roasted duck will become well done.
