Rehydrate the wakame in a bowl of cold water. During that time, cook the udon noodles.

In a separate pot pour the soup base and bring to a small boil. Add enoki and let it cook for 2-3 minutes. Add a dash of soy sauce.

Strain the noodles and serve them in bowls. Add soup mixture directly on top of noodles with out stirring the mix. Add on top of the soup the wakame and tempura.

Add the chopped green onions as garnish.

Since udon soup base is quite subtle in taste, serve this dish with an array of spices and sauces.
