Also in the lamb:oregano,lemon zest.
Also in the sauce:onion
,carrot,garlic,dried chili,capers.
Lamb breast is a delicious cut from the rib of the lamb,the only thing I don't like is taking the bones out before stuffing and rolling it,really takes some patience to do it,
but it's all good after that!

You did remove bones from lamb rack,right? You are pretty good at cutting! I did but once,because I was yearning for preparing from scratch like you! but I immediately regretted my act....my lamb portion became tatters..lol! I gave up the attempt in despair..
After that,
i couldn't do it myself.
However i looove lamb dishes!
Not only your knife skill,Your lamb dishes is restaurant's quality!

Thank you my friend,always happy to hear your compliments!I think you know,it's a little further down the rack,a big piece of meat with five to six bones,like back pork ribs.It's really a skill that all cooks should have,I have seen people very good at it,but everybody starts off very slow,I still n
need to get improved on!So please don't be defeated,you will only get better with a few practices!This cut is so delicious,such a shame it takes a bit of work,but the upside is that I get a few bones that I could make a sauce with next time!
