Turkish Pide with a Chinese Twist

all purpose flour unbleached
3/4 cup
lukewarm water
1/3 cup
dry instant yeast
1 tsp
brown sugar
2.5 tsp
salt
1 tsp
olive oil
2 tbsp
mushroom shitake minced
1/2 cup
minced chicken thigh
250g
red bell pepper finely chopped

minced onion

soy sauce
1 tbsp
grated ginger
1/2 tbsp
veg stock
1/8 cup
sesame oil
1 tsp
sake
1/8 cup
ketchup
1/2 tbsp
chilli powder
1/4 tsp
grated garlic
2 cloves
parsley for garnish
a handful
green onion chopped
a handful
semolina flour
for dusting
作り方

lets make the dough: in a cup, mix lukewarm water, 1/2 tsp brown sugar and yeast. wait for 10 mins to foam up

in a bowl, mix flour, olive oil, salt and yeast mixture with a spoon. once it become a dough, transfer to a flour surface and knead for 3 mins. you will need flour as you go. this is a slightly sticky dough

let rest for 45mins to 1 hour. cover with a damp towel

in a large bowl, mix chicken, mushroom, bell pepper, onion, green onion, 1/2 tsp soy sauce, 1 tsp brown sugar, ginger and 1 tbsp olive oil together till well combine

in another bowl, combine veg stock, sesame oil, sake, 1 tsp brown sugar, ketchup, 1/2 tbsp soy sauce, chilli powder and grated garlic

heat a large pan over medium heat. add in the chicken mixture. stir fry for about 3-5 mins till some of the liquid evaporates. add in half of the stock mixture and stir fry till most of the liquid evaporates.

add in remaining stock and stir fry till all the liquid evaporates. it should takes about 7 mins. remove from heat and set aside

preheat oven to 230 degrees. once the dough has risen, transfer to a flour surface. divide into halves. roll the dough into an oval shape.

transfer the rolled dough into a baking sheet floured with semolina flour. spoon in the cooked chicken in the middle of the dough. fold the edges and pinch the 2 ends.

repeat the step for the remaining dough. wack the pide into the oven and bake for about 15 mins or till golden brown. garnish with chopped parsley and serve

voila! Turkish delight with a Chinese twist...
ポイント

you can mince your chicken thighs using a cleaver and chop it up into pieces. or you can throw it into a blender or food processor. just pulse it a couple of times will do the trick.

While waiting for my sour dough to rise, I thought of this dish... I dun eat mutton so I decided to jazz it up with a Chinese style minced chicken... Still taste heavenly tho...
