Pre-cook the noodles in a medium lidded pot. Coarsely chop all vegetables (except enoki and shiitake) and add to a large cooking pot. Cover with water and bring to a boil.

Add soy sauce in small increments and stir in.

Turn the settings to low and add enoki and shiitake. Simmer until the base has reached a thicker consistency.

Add noodles and serve.

For a lighter version, use somen noodles instead of soba.
