Grilled Prawns: 24 prawns (16-20 count), peeled and deveined ¼ cup extra virgin olive oil 2 tablespoons fresh thyme 3 tablespoons shallots, minced 1 tablespoon cumin 2 tablespoons basil, chopped Kosher or sea salt and cracked black pepper to taste 18 cherry tomatoes ½ lemon, juiced 6 skewers, soaked in water for 6 hours
Avocado Salsa: 1 ripe avocado, diced 1 small red onion, diced 1 small Roma tomato, seeded and diced 2 tablespoons cilantro, chopped ½ lemon, juiced 2 tablespoons olive oil 1 tablespoon white vinegar Kosher or sea salt and cracked black pepper to taste

Marinate the prawns in olive oil, thyme, shallots, cumin, basil, salt and pepper for at least 4 hours before grilling.
Once marinated, skewer the prawns and cherry tomatoes and grill, 3-4 minutes on each side. Season with the lemon juice, salt and pepper while grilling.
For avocado salsa, combine all ingredients and let chill in the refrigerator
