Wash the baby spinach and rocket in plenty of cold water and drain and spin in a lettuce spinner
To cook the prawns place a large frying pan on a high heat.
When its smoking hot, place the prawns in the pan, add the olive oil and sauté until they start turning pink, add the garlic, shallots and chilli and sauté for a further minute fins with the lemon juice.
In a large bowl place the cut cherry tomatoes and dress with the balsamic dressing, add the washed leaves and toss.
Place the bowl of dressed salad in the centre of the table with the sauté prawns and some fresh crusty bread
