Italian herb and cheddar muffin bites

Flour
2 cups
Baking Powder
1 tablespoon
Salt
1/2 teaspoon
Cold butter unsalted
5 tablespoons grated
Extra sharp cheddar cheese
1 cup
Regular cheddar cheese
1/2 cup
Buttermilk or milk
1 1/2 cups
Oregano
1 teaspoon
Basil
1 teaspoon
Rosemary
1 teaspoon

Preheat oven to 400 F

In a large bowl, whisk together flour, baking powder, salt, oregano, basil and rosemary

Cut in butter just until it is coated and flour is crumbly

Stir in cheeses until nicely coated

Make a well in center of mixture and pour in buttermilk/milk

Use a rubber spatula or your hands to mix the buttermilk until it is moisten

Batter will be sticky. Do not over stir.

Grease a mini muffin tin

Use a mini ice cream scoop to drop batter into the tin

Bake 8-10 minutes until golden

Remove from over and lightly brush melted butter on top and sprinkle with parsley

Serve hot or put aside and warm up later.
ポイント

This makes about 48.
They are amazing and I used a chipotle cheddar mixture. I also used a butter flavored grease spray. You must make sure the butter and the milk is cold.
