Well I am surprised!There are lots of tonsoku dishes both in Chinese and Japanese cuisines,I always like the back leg meaty ones,but I am starting to appreciate the less meat but "skinny" front legs more recently.I have to mention the peanuts here too,they soak up the delicious sauce and become nice

Actually the first time for me to make this as well,I have never cooked with peanuts like this,but suddenly I was craving for it,and it was a real treat!Especially love the peanuts,nice and tender with the long braise,and soaked up the delicious sauce!Very basic recipe,soy sauce,wine,star anise,etc…

Like I said,I used to like the meaty back leg,which is the pork knuckle better,but only recently start to like the front legs more.I don't know why,I thinks it's just natural,may be for you one day as well.I didn't see US style pickled,but I see Okinawa style,that looks great as well! Haha,I understand,I only started to accept it more recently,I suggest that you start with more meaty pork knuckle first,one of my favourite dish ever is Shanghainese "紅燒元蹄",the Thai pork knuckle with star anise is also to a great treat!Always happy to hear your compliment,I have edited the title too
Ok,quite simple.there are two types of raw peanuts,crunchy or tender when braised,I use the tender type,soak them in water for two hour.In a pot,put豚足,water to cover,bring to boil,5 mins,take out豚足and wash clean.In a pot,add oil,add green onion,piece of ginger,fry this until quite dark in colour,add
water,soy sauce,紹興酒,salt,little black vinegar,peanuts and 豚足,star anise ,Sichuen pepper(花椒,or use 山椒),braise this slowly until tender,add rock sugar,cook a little more,finish with sesame oil.I use pressure cooker,around 18mins.Enjoy!
