Remove all stem and seeds from the peppers, hard tops from aubergine and courgette, next cut all vegetables in same size pieces (not to large).

Heat up 2 tbs olive oil on a pan and pan fried vegetables, starting with the onions for 2 min., follow by peppers another 2 min., then the courgette, aubergine and 2 garlic cloves, for other 2 min., add the tomato sauce and bring to simmer, then cook for 10min. on slow heat, adding water if become to dry. Season to taste.
