Went into a random restaurant at Ginza and ordered a few random dishes,this was one of them and turned out to be one of the most memorable western/Japanese dish I had.Sadly this miso themed restaurant is no longer exist,it became my mission to reproduce this miso fondue.I choose gruyere and Emmental,along with white wine,kirsch,bit of nutmeg and of course white miso. I couldn't remember what were served with it,I used the standard things,adding some Japanese materials that would go well with cheese. Is it worth to invest a foudue set?My answer is a definite yes,even if it is just for this!

I don't know for a Japanese,but it's an amazing new idea for me!You are right,miso is fermented food and goes well with other fermented food like cheese,but miso in fondue is totally unheard of,and it was so good that I couldn't stop eating! I didn't realise elleatable has a miso croque madam recipe,I need search for it,it must be good too! Well,I know Ginza quite well,just because I focus my activities there,but overall in Japan,there are still lots of unknown to me!
Hi Lara! Yes,like everyone says,fermented food are always good together,and soy products goes well with a lot or western food too. Miso is really versatile,I have had many great dishes made with it,but adding cheese to become a fondue is just one of the most creative use I have seen,it's really really delicious,I hope you could try someday and I am sure you agree! I often use miso with cheese or whole grain mustard these day. When I cook "miso×cheese" dishes, I useally pick Comte or Parmesan. I have never used Gruyere and Emmental with miso. I'll try it. First, I need a fondueset!!

Miso is really great with semi-dried cheese,please try and sure you will agree! It is worth to buy fondue set,if not,a little stove with candle will work fine,provided you have a small pot,all of these shouldn't be expensive!

仙台在山形附近,應該是你很熟悉的食物吧。仙台麩是在東京買的,回來的那天,本想買車麩但找不到,只有這個便買了試試。我看過很多麵包的菜式也會用車麩代替,效果也不錯!哈哈,日本人那麼有創意,可能製造人老早看過了!

其實這個構思了不少時間,除了加了味噌的芝士火鍋,配料都經過深思熟慮,西方的東西加了日本元素,不尋常但又合理的配搭,這個真心覺得美味的菜式,得不到預期的受歡迎,有點無奈。
